Baby Boom

No, I'm not pregnant.

Remember the movie Baby Boom? Remember the part where she makes all that applesauce??


Well Mandy reminded us of that today while we were slaving away cooking up batches of baby food for our little ones. Mandy has this fancy shmancy baby food cooker that she's been wanting to use. So now that our munchkins are eating solids, we decided to give it a whirl. Mandy, her friend Jennie, and I busted out the machines this afternoon and got to cookin'. We also used two steamers and the food processor plus Jennie's machine to be more efficient. We ended up cooking sweet potatoes, green beans, applesauce, pears, and carrots...yum! It was super easy and cheap and lots of fun! Why didn't we do this sooner?!

 (Yes, I know the labels on top don't match the foods inside...I got over it...you should too)

Easiest Cookies Ever.


I had these left over from the holidays so I decided to do some baking.

I found this cookie recipe while checking out Kim's blog. We went to VU together (oh so long ago) and I happened upon her blog somehow. Anyway, it's seriously the easiest cookie recipe, but the best part is you can put whatever you want in it!

Chocolate chips? Sure!

Butterscotch chips? Why not!

Peanut butter cups? If you'd like!

All of the above?? Yup, that's what I did!

Ok, here is the cast of characters:


Ingredients:
1/2 c. oil
1/2 c. oats
2 eggs
1 box cake mix (whatever kind you want. I used yellow cake mix)
1 c. goodies of your choice

Mix oil, oats and eggs together for a minute


Next add one box of cake mix


Then stir in one cup of whatever goodies you want. So I may have misread the recipe and added a cup of each of those goodies. It may have been intentional, just perhaps.


Spoon (or form in a ball) on to a cookie sheet and bake at 350 for 8-10 minutes. I actually bake mine for 12 minutes but I think it may have something to do with the massive amounts of goodies I put in there. Perhaps.


Try to let them cool before you devour taste!

False Advertising

Look what I found at Costco today:

 

Yum, Pat & Oscar's breadsticks are oh-so-good and so not good for me but I had to get them when I walked by the aisle. I was excited because not only was it cheaper than going to the restaurant to buy bread but it also came with the butter and garlic (you know it never tastes quite the same when you try to replicate it). See, it says it right here:

 

So imagine my disappointment when I opened the bag to find that there was no butter and garlic. What's up with that?! Did they all not have it or did I happen to pick the one bag that was missing it? Do I suck it up and deal or do I return it? Uh yeah, of course I returned it...well actually I had Bri return it. Ok, exchange it. Apparently people were opening the bags and taking out the butter/garlic packets in order to have extra! Losers. :)


We got one with a packet! Whoot whoot. Dinner was great, even though after all that, we didn't even have the breadsticks. It was the principle of the matter. Ha! Maybe later this week.

It's Still Daylight??

I'm sitting at home at 6:28pm and it's still daylight outside. Wait, what are you talking about?! 

(Oh, thaaat's what the neighborhood looks like during the day) 
 
For the last few years I have been working a split shift...going in to work in the morning, having the afternoon off, then teaching a class at night. It was cool when it was just me, then when it was me and Bri it was still ok because we lived close so I wasn't home too late. Well, now that we commute to work (grrr) and I'm preggo working a split hasn't exactly been ideal. I had been getting home around 9:45pm...yes I said pm...which meant I always got home when it was already dark, never sat down to dinner with Bri, or even got to enjoy the sunset. Now please don't take my whining explaining the wrong way. I'm not complaining, just telling it like it is. I have been fortunate to only work 4 days a week this year, so it's kind of made up for being home so late.
Anyway, I'm rambling. The reason I am at home during daylight hours is because my dr. "recommended" that I work less hours during the day. And since my school is closing in June and I won't need all my sick hours for maternity leave, I'm using them now and not teaching my night class for the rest of the school year. That means I will be home much earlier. Like today. So I took advantage of this new found time.

I got to go on a walk with my husband...

AND sit down to a home cooked meal (of Chicken Parmigiana) with him...one of his favorites!


And now I know what it's like to be home (at a normal hour) during the week. This might take some getting used to! Notice I said might :)

A Day In Our Kitchen

I realized that most of the things I have been posting have either been about the baby, pregnancy, or sewing projects. It's funny how one of my absolute favorite interests hasn't even made an appearance! Those who know me well know I LOVE cooking and baking. I love taking a recipe and adding my own "love" to it. Our kitchen has always been my favorite room in the house (it may change once baby girl gets here though) and I really enjoy having people over so I can use my culinary "skills."

Since getting preg-o I haven't spent too much time in the kitchen for one reason or another. I know, bad wifey. Well today I decided that I wanted to make a pie. Why you ask? No reason. Just to make a pie. Hmmm, so many to choose from, but in the end I went with one of my favorites. Banana Cream. It's a bit different from a traditional Banana Cream so it's being called "Banana Cream Delight." Fun huh? Ha!

 Instead of a 9x13 I made two round pies...crust just out of the oven...
